Rachel Bryden's Spinach Roulades

SPINACH ROULADES

6oz spinach, cooked squeezed and chopped very finely (preferably in a food processor)

3 eggs separated

1 tsp salt

½ tsp black pepper

¼ tsp nutmeg

 

 

Preheat the oven to 400 degrees farenheit.

 

Prepare a 10” x 14” swiss roll pan with a sheet of baking paper.

Place spinach, egg yolks, salt, pepper and nutmeg in a bowl and mix together.  Beat the egg whites until they hold soft peaks.  Fold whites into spinach mixture.   Spread into the prepared pan.  Mixture will be a thin layer.  Bake until set about 10 – 12 minutes.  Turn out onto another sheet of baking paper and leave to cool.
